Big Pile of Chicken, Brussels Sprouts and Quinoa
To continue the theme of piles of food. Quinoa, baked chicken, roasted brussels sprouts, monterrey jack cheese and srirachia. After not being thrilled with some earlier attempts at both quinoa and brussels sprouts, I gotta say it was all kinds of delicious.
I also had a pizza dough ball that was going to go south if I didn’t use it so I made a naan kinda thing in my cast iron skillet with garlic butter. Yeah, that was as awesome as that band it sounds.

Man, that pile of barbacoa wouldn’t end.
Heat and eat with chile garlic mashed potatoes and sauteed spinach. and a bottle of wine.

Barbacoa Hash
When you’ve already made tacos and quesadillas from an ungodly pile of barbacoa, what’s left to do with it? Why, make breakfast out of it, of course.
This mess is hash browns (aka shredded berdaders), onions and barbacoa, all mixed up, and topped with a couple of over-easy eggs, because yolks.

Dutch Oven Mushroom, Bacon & Spinach Risotto
Who says you need to constantly stir risotto? After finally getting around to getting my hands on an awesome cast iron dutch oven, I had to come up with something to make in it. I used this recipe which doesn’t necessarily call for a dutch oven, but hey, I’m a grown up and I do what I want. Also, when making risotto, the answer is always mushrooms.

I know we all know Guy Fieri is the worst. But the Comet Cafe in Milwaukee is not. Any place that gives you a basket of bacon is the best. Ever since I saw this segment I wanted to make this meatloaf. And it was everything I dreamt it would be. To make it, I ground a piece of chuck and just adapted a regular meatloaf recipe to include the ingredients listed out in the video. And it made for some delicious leftovers.
Chicken Enchiladasasasasassas
Just a great delicious comfort food meal, and they reheat great. I just used the Old El Paso enchilada sauce. The next step is to make my own from scratch. I made this from a frankenstein of recipies from Foodily. The filling was a mix of chicken, green chiles, roasted poblanos and cheese. I also used pepperjack “melting cheese” which was similar to velveeta. It was good the night I made it, but I wasn’t crazy about it eating it the next day. With refried beans + taco sauce (makes a killer dip), sour cream and cilantro rice.
Chicken, White Bean, Kale Stew
Probably one of the easier meals I’ve ever made. Spawned from this recipe, I swapped white Cannellini beans for chickpeas, because thats what I had, plus I’m not a big chickpea fan. I also added kale, and then high fived myself becuase it was a great idea. If you do make this, make sure you really do have a sturdy bread, the plain italian bread I had turned into mush instantly.
